Easy Fried Rice


Hello All! Tonight I decided to share one of my own recipes. Yesterday while I was making dinner I realized I was craving fried rice (yes, I think about future meals before I even have my next one) so I figured I could finally share one of my recipes with you all! 

This is seriously the easiest Fried Rice ever. So easy that I'm not even going to give measurements. Yup, that's right. Here we go!


Ingredients:
Rice (One-three days old - don't ask why)
Meat (Today I used ground turkey)
Celery - chopped
Zucchini - chopped
Carrots - chopped
Onion - chopped
Garlic - diced (I used two cloves)
Eggs
Soy Sauce (Mine is low sodium)
Sriracha (If you like a bit of spiciness)
Oil
Salt
Pepper

Tools:
12" Sauté Pan
Wooden Spoon

Directions:
1. Cook meat with a bit of oil, garlic and seasoning of choice. I just used salt and pepper and added a bit of soy sauce and sriracha to the meat.
2. Once the meat is fully cooked, add all of the veggies and cook until veggies are at your preferred tenderness.
3. Push cooked meat and veggies to the side (luckily your pan is so big!) and scramble the eggs on the side.
4. Once all the previous ingredients are fully cooked add the rice and a bit of oil. (Now you know why you needed such a big pan) This is where the "frying" part happens and you'll know the frying is happening when you hear a bit of crackling.
5. Add in soy sauce and sriracha to flavor.
6. Put in a bowl and eat!


Seriously, is this ridiculously easy. The reason I don't measure is because it's the perfect "what's in my fridge" meal. I used my veggies of preference but if there's others in the fridge, I might use them. I'm not sure why the rice should be a couple days old but apparently that's just how it's really done. Also, my mom has always told me "Cooking is an art, baking is a science" So when I cook, I can do whatever I like to make it delicious. I must say though, with fried rice, it all adds up. You definitely will not need huge portions of everything because once everything has been combined and cooked, you definitely say, "Wow, that's a lot!"

And for some side dishes I made some edamame with sea salt (I have an edamame obsession!) and spring rolls. My little secret is that the spring rolls are Lean Cuisine - Garlic Chicken Spring Rolls and they are seriously amazing. Three of them are only 200 calories, you can cook them in the microwave or oven and they turn out crispy either way, and they're just awesome. I only made two for myself and ended up only eating one since I had so much food but you can definitely eat the recommended serving of 3 as a lunch entrĂ©e and it'll be good.


The whole dinner only took me about 20 minutes so it's perfect for a night where you don't have too much time. I hope you all enjoy it as much as my boyfriend and I do!

TV to Talk About or Gossip About

Hello everyone! I find TV shows to be some of the best conversation starters and that's why today I decided to post about all the TV shows I watch. I should have probably posted about this in late September when Fall TV came back but that's okay. A lot of channels now have mid-season and rotating schedules so I'm still writing at a good time.

Ok, don't judge me but I love watching TV shows. I seriously record more than 30 TV shows and it's bad, I know it's bad. BUT to be fair, I don't spend my whole life watching TV. I don't go out on the weekends/days I work the next day so I'll watch my shows then after I go to the gym. I usually always watch the Dramas on time or within a day and let the others build up on my DVR then watch them on a lazy Sunday or something.

[My boyfriend thinks I'm nuts because I'm so obsessed with HGTV. I'll watch marathons all day long. And unfortunately for him, I have very unrealistic expectations on how my future house should look. HGTV and Pinterest are not a good combination. PLUS, Tysons Mall now has a HGTV Home Pop-Up Showroom and it is awesome. They also had two HGTV stars come in Taniya Nayak and Casey Noble both made appearances in October. I didn't go to either but I should have!]

[I love recording these shows because they're perfect to watch, well, not watch while I'm doing things. AKA - Perfect background shows. I'm usually always playing one of these shows while I'm cleaning, cooking, blogging, job hunting, etc. I've seen every episode of all of these shows and could watch them a hundred more times. I have the entire Sex & the City collection and a few seasons of Friends. I'm also wondering if The Nanny will ever release the last few seasons because if they do, I'm buying them!]



Holiday:
And now that it's November, ABC Family has released their 25 Days of Christmas lineup and I must say, there are some things I'm upset about. This year they are missing the Home Alone movies and Elf from their lineup. WHAT?! I've also always wondered, why do they never air Santa Clause 2? Can someone please explain this to me. They are playing it once but that's not enough for how much they're playing 1 & 3. Also, I'm uber excited for Lifetime and Hallmark to start showing their holiday movies. There's something about those cheesy plot lines that I absolutely love.



And don't even make me go into past shows. Oh gosh, I'd go on forever. Seriously, Netflix and Hulu are no help. Well, they are a help but they aren't helping me with my choice to try and not watch so much TV.

Halloween at Falcons

Hello, hello! I hope you've all had a fabulous Halloween! All the festivities I participated in were through work and it was a blast.

Incase you don't know, I currently work at a retirement community for retired military officers and it is awesome. I've been there for 7 years now so I'm very active in participating in resident and employee activities. On Tuesday we had a Doggy Costume Halloween Show. Anyone with a dog could participate and would dress up their dog and head down to the Assisted Living area and strut their stuff on the runway. Here are some of our lovely participants.
Seriously, how cute are these dogs?! This wasn't at all a contest. It was something to make some of our assisted living residents smile and boy did it work.

Then on Thursday we did our employee Halloween party. We had a costume contest and a pumpkin carving contest. Our judges were a few or our independent living residents so we really had to impress. Here are some of the costumes of the day.
There were many, many more but these are the only ones I was able to get pictures of. It's super funny though because there were four different categories: scariest, funniest, prettiest and what is it. My friend and I were Buzz & Woody and decided to be in the What is it category because way too many residents asked us who we were. Yeah, we won. Apparently almost none of them had every watched Toy Story, who knew?

And for the pumpkin carving contest, here is what we had.




My pumpkin also won for the funniest category. Since I'm technically in the security department I decided to make a pumpkin with my manager in jail and our CEO as the warden. I must say, it was pretty funny. Don't worry, I got prior approval from the CEO before I stuck anyone's picture on a Mr. Potato Head. Here it is!

Seriously, this week at work was so fun. I also got many different ideas for future Halloween activities and am already excited for next year. -- I hope you all had a wonderful Halloween and one as fun as I had!

And for a few side notes, I finally am off the Ipsy waiting list and will be receiving my first one this month. Also, the Starbucks red cups are out. I most definitely went and got my first Peppermint Mocha of the season. I can't wait to start blogging the heck out of this Holiday Season! Talk to you all soon.
